Sihan has worked at Grange City Hotel for 18 months now, embracing his role as Executive Head Chef. He was first drawn to Grange Hotels because of the bustling atmosphere - there are always events and conferences under way! This, combined with our reputation for accommodating and catering for popular sporting events really appealed to Sihan. He loves a challenge and a fast paced working environment.
Sihan’s day always starts with a strong cup of coffee! He begins by organising the day’s busy work schedule and briefing the key team members on the day ahead. Breakfast must be quality checked daily to make sure everything is up to 5 star standards.
After breakfast, Sihan spends time updating admin work, planning menus and ensuring deadlines are met. Of course, maintaining the highest health and safety standards throughout the day is an ongoing, vital task for Sihan and his team.
For the remainder of the day, Sihan monitors and manages the food service and presentation for all meals. This also takes into account any special events or conferences running during the day. He then has another cup of well-deserved coffee and begins planning tasks for the following days.
Going above and beyond is core to everything Sihan does. He believes that attention to detail, flexibility and listening to customer feedback is the key to success. Here, he explains a recent example of how Sihan and his team went above and beyond:
“Recently we had an ethnic cuisine event which we would normally not prepare in our hotel due to lack of specialist equipment and availability of very specific ingredients. So, to make it happen, we made some local purchases and managed to produce the buffet as authentically as possible, ensuring the guests were satisfied, of which they were.”
